  • 4 Pieces Boneless Chicken Fillets
  • 1 Cup Chopped Frozen Spinach thawed and drained
  • 2 Balls Buffalo Mozzarella Cheese
  • Seasoning of Choice use your favorite herb and spice blend

Instructions

  • Gather all ingredients and ensure the spinach is fully drained to prevent excess moisture. Preheat oven to 400°Fahrenheit (200°Celsius).
  • Slice each chicken breast horizontally without cutting through completely, then open and pound lightly for even thickness.
  • Lay the chicken flat, layer spinach and mozzarella on top, and roll tightly from one end, keeping the filling inside.
  • Place rolls seam-side down in a baking dish, top with more spinach and mozzarella, cover with foil, and bake for 45 minutes, uncovering near the end to brown the cheese.
