  • 2 Cups Protein Powder plain uinflavored
  • ½ teaspoon Fine Salt
  • teaspoon Baking Soda double-acting
  • 2 ½ teaspoons Baking Powder
  • 1 teaspoon Xanthan Gum for structure

Instructions

  • Preheat the oven to 320°Fahrenheit (160°Celsius) and gather all ingredients at room temperature for the best texture and even baking.
  • In a mixing bowl, whisk eggs and sweetener until fluffy and smooth to create a light, airy base.
  • Add cream cheese, butter, heavy cream, and oil to the egg mixture for richness and moisture.
  • Whisk until the batter is creamy and well combined, forming a smooth base for the loaf.
  • Gently add protein powder, baking soda, baking powder, and xanthan gum, mixing until evenly incorporated and lump-free.
  • Whisk once more to ensure smoothness, then pour batter into a parchment-lined loaf pan or silicone mold.
  • Bake for 40 minutes at 320°Fahrenheit (160°Celsius) until golden and fully set, then cool before slicing and serving.

  • Use room temperature ingredients for the best dough texture. This helps the double-acting baking powder activate properly and gives you a soft, fluffy brioche every time.
  • Add dry fruits or nuts inside before baking for extra touch. 
  • Split half of the dough and add cocoa powder. Swirl in for another idea.
