Gather ground chicken, zucchini, egg, garlic, green onions, and seasonings, keeping olive oil ready for frying.
Grate the zucchini and squeeze out excess moisture using paper towels or a clean cloth to keep the mixture firm.
Combine chicken, zucchini, egg, garlic, green onions, paprika, onion powder, salt, and pepper in a bowl, stirring until evenly mixed.
Shape the mixture into 1½-inch balls and fry in olive oil over medium heat for 3–4 minutes per side until golden and cooked through.
Grate and squeeze zucchini well to remove extra water. This helps the fritters hold together and stay crispy while cooking.
Use a non-stick skillet or a little olive oil for frying. It keeps the fritters golden brown without sticking.
Season the mixture with garlic powder, onion powder, or paprika. A little spice adds a lot of flavor to each bite.
