Ingredients

  • 2 Pieces Chicken Breasts cubed into chunks
  • 1 Piece Zucchini sliced thinly into half-rounds
  • 1 Piece Red Onion cut into slivers
  • 1 Piece Red Bell Pepper diced
  • 2 Tablespoons Olive Oil
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Italian Seasoning
  • 1 Pinch Salt
  • 1 Pinch Pepper

Instructions

  • Preheat oven to 400°Fahrenheit (200°Celsius) and place a baking sheet inside to warm. Cut chicken into cubes and dice zucchini, bell pepper, and onion into bite-sized pieces.
  • Add chicken and veggies to a large bowl, drizzle with olive oil, season with garlic powder, Italian seasoning, salt, and pepper, and toss until evenly coated.
  • Divide the mixture between two large foil sheets, seal tightly with space for steam, place on the preheated baking sheet, and bake for 25–30 minutes until chicken is cooked through and vegetables are tender.

  • Cut vegetables evenly: Chop your vegetables into similar sizes so they bake at the same speed. This helps everything come out tender without some pieces being undercooked.
