Ingredients

  • 1 Block Feta Cheese
  • 8 Pieces Eggs large
  • 1 Tablespoon Olive Oil cooking spray
  • 1 Tablespoon Italian Seasoning

Instructions

  • Gather ingredients and kitchen tools, preheat oven to 400°Fahrenheit (200°Celsius), and let feta come to room temperature for easy mixing.
  • Place feta in the center of a baking dish, drizzle olive oil over and around it to prevent sticking and add flavor.
  • Crack eggs evenly around the feta, keeping yolks whole if desired, and sprinkle with Italian herbs for flavor.
  • Bake for 15–20 minutes until the eggs reach your preferred doneness and the feta turns soft and creamy.
  • Remove from oven, mash feta with a fork, and mix gently with the eggs until creamy yet slightly chunky; let cool briefly.
  • Scoop or form the mixture into rounds using a spoon or scoop, and serve plain or with a drizzle of olive oil for extra richness.

Notes

  • Use high-quality feta: A good-quality feta cheese melts better and gives a creamier texture.
  • Don’t overbake: The eggs should be set but still slightly soft in the center for the best texture.
  • Grease your baking dish: A light oil spray prevents sticking and makes cleanup easier.
  • Add fresh herbs or seasonings: Basil, parsley, or dill can improve the flavor without overpowering the dish. Black pepper can also add flavor to your dish.
  • Mix in veggies: Spinach, cherry tomatoes, or bell peppers add color and nutrients.
  • Let it cool before storing: This prevents condensation and keeps the bites from getting soggy. After cooling, you can place them in muffin cups.
  • Reheat gently: A quick warm-up in the oven or microwave brings back the perfect texture.
