Making quick and easy chocolate candies at home has become a fun habit, and I get excited every time I whip up a batch. I’m thrilled to share these recipes with you because I’m sure you and your kids will have just as much fun making them.

Starting with my single-coated nuts like dark chocolate almonds and chocolate peanuts recipe that are individually coated nuts. They are perfect for a snack if you love munching on tiny chocolate bites.

Chocolate-Covered Peanuts and Almonds

I created this collection of chocolate-covered nuts recipes to turn simple, plain snacks like my leftover peanuts and almonds into something more exciting and flavorful. Since I enjoy snacking on soaked almonds and plain peanuts, adding a sweet touch with chocolate would make them even better.

In my case, I used peanuts and almonds because they were what I had on hand, but you can use any nuts you like. This recipe has endless possibilities for cashews, walnuts, or a mix of different nuts.

Chocolate Nut Clusters Recipe

These chocolate nut clusters are shaped in small spoon-sized portions, a fun twist from my childhood snack where nuts were coated in sugar. This time, I’m making them with sugar-free chocolate to keep it healthier but still just as delicious and nostalgic.

Chopped Chocolate Crunch Bars

If you love chocolate bars with nuts, I recommend making chocolate almond and peanut bark because you can enjoy them any way you like. When I made these, I served them crushed and topped my cheesecake and berry trifle with them.

How To Make Dark Chocolate Recipes With Nuts

The best thing about these dark chocolate recipes is that all of them are sugar-free and gluten-free, including the chocolate used. Even if you do not make your own snacks and desserts, these recipes are so easy that they will make you do your own the moment you see them.

Kitchen Gadgets:

  • Instant Pot and Glass Bowl: The instant pot will act as the double boiler with a heatproof glass bowl to melt the chocolate.
  • Spoon and Long Tweezers: Use a long tweezer for transferring the individually coated nuts into the parchment-lined baking sheet and a spoon for nut clusters and barks.
  • Chocolate Bar Mold: A chocolate bar mold will be used for chocolate bark since you will need to shape the melted chocolate with nuts.

Ingredients:

  • Dark Chocolate: Use homemade dark chocolate or find sugar-free ones at the grocery stores.
  • Peanuts and Almonds: For the almonds, use whole unsalted ones or almond halves or slivers, depending on your preference. Unsalted peanuts are also best to balance the sweetness of the chocolate.
  • Coconut Oil: A small amount of coconut oil will help you achieve a silky and smoother melted chocolate.
  • Sea Salt (optional): A pinch of flaky sea salt will flavor the chocolate-covered nuts.

FULL INSTRUCTIONS WITH STEPS FOR MAKING CHOCOLATE NUTS

First Step: Prepare Nuts and Chocolate

Prepare the nuts and chocolate needed for this recipe. Separate the peanuts from the almonds and cut your chocolate bar into small pieces for easy melting.

You can use soaked almonds for the almonds, as they turn softer than fresh ones. Just make sure to dry them first before coating them with chocolate.

Second Step: Melt Chocolate

Simmer some water in the instant pot and place the glass bowl on top with the chopped chocolate and coconut oil. Let it absorb the heat and stir it with a stick to melt the chocolate easily. Keep stirring until you get a silky and smooth chocolate consistency.

Third Step: Coat the Nuts

Toss your choice of nuts into the melted dark chocolate and coat them with chocolate evenly. Make sure that you do not mix the nuts in one mixing bowl. If you are using peanuts and almonds, prepare separate bowls for each.

Once they are fully coated with chocolate, start making chocolate-covered nuts by transferring each coated peanut and almond onto a baking sheet lined with parchment paper. Make spaces in each nut so they will not stick to each other.

Fourth Step: Making Chocolate Clusters

Using a spoon, form the chocolate-coated nuts into a cluster and transfer them onto a parchment-lined baking sheet, as you would the individually-coated nuts.

You can use mini cupcake liners to form clusters for the peanut clusters since peanuts are smaller than almonds, and you might struggle to create them directly onto the baking sheet.

Fifth Step: Chocolate Bark

Use a chocolate bar mold or a bread loaf silicone mold to form the peanut and almond bark. Transfer the chocolate-coated nuts into the bar molds and fill them with more chocolate to make them perfect once they harden.

TRICKS AND TIPS:

  • Nuts: For these recipes, you can use any nuts you like. Pecans, pistachios, walnuts, cashews, hazelnuts, or chopped mixed nuts work well. Roasted nuts are a great option, too, adding extra crunch and flavor.
  • Chocolate: Like the nuts, you can choose any chocolate for coating. Dark chocolate is always a favorite, but you can select semi-sweet, milk, white, or chocolate chips.
  • Melting Method: No worries if you don’t have an instant pot. A double boiler or microwave works great for melting chocolate. Just be sure to stir until it’s silky smooth.
  • Parchment Paper: Parchment or wax paper is key for setting your chocolate treats. It prevents them from sticking while the chocolate is still soft, making cleanup easier.
